Answer: Eggs en cocotte, Oeufs sur le Plat, Oeufs Miroir, shirred eggs...all similar just different cultural names. But actually shirred eggs are placed under a broiler in a shallow dish until the white is softly cooked and the yolk is still liquid and have a "shimmering film" over them (thus Oeufs Miroir) - but Saveur magazine uses the same terms for baked eggs.

Answer: The first lady is partly right, Escargot en Cocotte are not in puff pastry, I am a former chef, a cocotte dish is a small covered casserole, the snails would be done with garlic, wine, mushrooms and herbs and served in the cocotte dish, the Seafood Quenelles are a mix of lobster, shrimp and white fish minced then pureed and then egg, cream and seasonings are added this is done in a food processor to make a fine paste, true you make oval dumplings with it and poach them in seafood broth or fish stock, and the Nantua is the sauce, made with the lobster shell/shrimp shells, cream and brandy like Americane sauce but lighter and it can have diced shrimp in it.
The Quenelles can be served as an appetizer or main course, I have made them many times with seafood, salmon, scallops, sole and other whitefish, you can even make them with chicken and veal.
Technically Escargot en Croute are in puff pastry, we served them in the dishes at the hotels I was a sous chef in for 20+ years.

I want to make coq au vin, but I cant afford a cocotte. Any substitutions?
I want to follow a recipe in french for a class, but it calls for a real cocotte (le creuset, staub, etc) and these are a bit pricey for me. All I have is a crappy non stick pot. Could I modify the recipe for that? Could I use a slow cooker? How could I change the recipe for that?
Answer: You needn't buy a fancy casserole dish just for this! I would use a medium size baking dish that has a nice fitting lid. About 1.5 or 2 quart size will work.
Most French country cooking is super simple and not the fancy stuff one gets at French Restaurants. And most of us cooking it don't have the fancy kettles, dishes, and other stuff the fancy TV chefs have access to. We all have to make do with what we have in the cabinet until we can afford to upgrade.
I have a lot of stuff on my "wish list" of kitchen equipment, but don't expect to get the brandnames of Le Creuset, etc.

Answer: The starters all sound pretty heavy. The lowest fat starters are the Beef Carpaccio or the Crab cakes. The rest all have lots of butter, cream, etc.
For soups/salad I would either have the onion soup or ask if their other soups are cream-based - if they are, skip them. You might try the Spinach Salad.
For the main course, because of the beef or crab cakes and then the scallops (if you order the Spinach Salad), I'd try the Les Petites Assiettes (smaller portions and lower price) and of those items I'd choose the trout, the braised oxtails or the lamb chop.
Now, on what they are:
Tiger prawns are very large shrimp on a kind of cream sauce over polenta (like cornmeal mush).
Escargots are snails - generally cooked in lots of butter and garlic.
Beef Carpaccio is beef tenderloin with mixed greens, vinaigrette dressing, some parmesan cheese
Seafood Quinelles Nantua is pureed seafood in a cream sauce.
Sauteed Potato Gnocchi Milanese are little dumplings made out of mashed potato and flour - and served in a tomato sauce like a spaghetti sauce.
Assorted French Charcuterie is an assortment of cooked meats served with the bread.
Dungeness Crab Meat is meat from a crab mixed with things like onion, egg, bread crumbs or cracker crumbs and pan fried into a little patty. The rest is the sauce over the top of it and greens with orange segments could be a salad.
Under Soups and Salads:
Heirloom Tomatoes with Buffalo Mozzarella are sliced tomatoes and slices Mozzarella cheese (that comes from a buffalo instead of a cow).
Filo Flower Pot is Filo dough (used in making light crumbly desserts) is the container for the salad that has goat cheese, salad greens, pears and roasted walnuts. The Port is the dressing.
The Butter Lettuce is a particular type of lettuce - wide leaves in your grocery store, with a diced egg and a dressing with a hint of cream in it.
Salad Melee is kind of like a "Soup of the day" but is a salad - changes depending on what they have in the kitchen.
Spinach Salad with scallops can be spinach with possibly red onion and the scallops can either be cold (boiled) or hot from the skillet. The dressing is generally a vinaigrettte.
The Five Onion Soup is a form of French Onion Soup (beef broth, lots of sauteed onions, a Dutch Rusk or Round toast on top, sprinkled with Parmesan cheese and grilled until the cheese melts. Very good but lots of fat in the cheese. Not much fat in the soup.
Main Course:
Petite Bouillabaisse is a small soup filled with seafood - tomato-based. The seafood (like clams) are served in their shells.
Fillet of Trout is basically a pan-fried trout with mashed potatoes and veggies.
Beef Brochette could be a tenderloin with a slice of bacon wrapped around it, mounted on top of a bed of mashed potatoes that has crab meat in it.
Chicken Cannelloni is stuffed large macaroni shells - the tube shaped ones - lots of cheese, baked with a white sauce and tomato sauce.
Braised oxtails - kind of like a stew - very good.
House-made Saucisson - air-dried sausage served with bacon braised cabbage with a mustard sauce on it.
Grilles Lamb Chop with Gratin Dauphinoise potato - Grilled lamb chops with a kind of scalloped potatoes with cheese. Served with veggies.
Veal Piccata - Veal (calf meat) as a patty probably breaded and pan-fried until golden, served with a light cream sauce. Served with rice. Jasmine rice is very good. You can smell the jasmine flower in it.

Can I cook small portions in a large dutch oven?
My mom gave me this huge 5 quart Le Creuset enamelled cocotte, will I ruin it if I cook small bits?

Answer: LUCKY YOU.. I am Jealous! No you won't ruin it, but your food will cook much quicker than you may want it too. There are only three of us in my house hold, and I use my dutch oven to make meals that I want to have one night, and then freeze left overs in for the nights we don't have time to cook. I would suggest that you try some good slow cook recipes but cut the proportions in half and keep your eye on the cooking time and temp. And just make sure you keep enough liquid (wine, broth, water or juice) extra to keep whatever you are cooking moist. Good Luck and Happy Cooking

Answer: I am a former chef and worked in 4-5 star hotels and was trained in classical french cuisine back in the 1970's and it is a dieing art or way of preparing eggs, we did them even shirred eggs in gratin dishes, if you do not have a ramekin like the first person said, most Dollar Giants and Barns sell them for very little, but heatproof glass or Pyrex custard cups are fine to, and when you do cook them in the pan with the water, put a few layers of paper towel in the bottom and only fill it half way up, and boil the water first to aid in the cooking.
You can even add things to the eggs en cocotte, like cream, cheese, veg, meat or seafood too. just make sure to cook them very gently and not to long as they should be like a poached egg in consistency.
