how do you cook a pot of curry for 30?
Answer: You can basically just multiply your favourite curry recipe accordingly. But in doing so for any recipe, a common mistake is not understanding that for certain ingredients it's not a good idea to multiply by that extent as it can change the whole taste. If you're unfamiliar with the nature of certain ingredients, it may be a good idea to run through with a more experienced cook before buying the stuff & cooking. For cooking a huge amount of curry, I blend up the spice paste first which already has the essential seasonings inside in a concentrated form, plus additional chilli paste on the side to adjust the spiciness if required. This means I have the flexibility to adjust the amount of curry to cook & also adjust the taste uniformly. As for the hardware, 30 is not really a huge number and if you don't have or don't want to buy new super big pots, another way is simply to cook the curry in batches using your existing pots.

I got a slow cooker for new year form my mother-in-law and omg how did i live without it... i have posted some recipes below do youhave any others as i dont want to keep making the same thing.....
Soup
Use orange lentils or split yellow peas. I pour over boiling water and let them soak overnight. Rinse and put in slow cooker. Then I add an onion that has been chopped and slightly cooked (in the microwave, makes life easier). Add a few chopped or sliced carrots to the slow cooker, add garlic if you like, if you have any stock, say from the joint of bacon I mentioned before, heat it up in the microwave and add to the slow cooker. If you have no stock make some with any stock cube you have handy. Make sure the lentils etc are covered by the stock. Add any dried herbs you like. Give it a stir. Put cooker on after about 7 hours., just check to see if the lentils are cooked, if not just leave a little longer until cooked. You can use up any leftover celery or you can add bacon chopped up and put in with the other ingredients if you wish. I can’t give exact amounts because I just add what I have in. If you have a large slow cooker it should work out approx as 1 litre of stock to 150g lentils, I think. I always just make sure that all the ingredients are covered, and do a couple of checks whilst it is cooking to make sure in case it needs any more liquid. If you want a creamy soup, then liquidise with a blender, the hand one is best, after cooling it. You could garnish with some coriander leaves and put a swirl of cream or fromage frais on top when serving.
Oriental Honeyed Pork
This is a really tasty slow cooker recipe.(amounts are for 4.5 litre cooker) cube 1kg pork fillet &toss in seasoned flour/corn flour(or iv done it with up to 6 -8 pork chops),heat oil in a pan, fry 1 large chopped onion & 2 crushed garlic cloves, add pork & lightly brown, add 2 chopped green peppers,8 chopped mushrooms,6 chopped tomatoes(or a can)and a big tin pineapple pieces.(keep the juice).In a jug measure 1 litre chicken stock,5 tablespoons honey,3 tablespoons soy sauce, mix & pour over pork in pan, blend 5 tablespoons corn flour with the pineapple juice and add this to pork pan, bring to boil then transfer all this to your slow cooker and cook on medium for 5-8 hours. This sounds a bit faffy but its not ,sometimes I prepare everything the night before ready to just bring to boil in the morning, switch on and go to work. Serve with rice or new potatoes and green veg.
Beef in Red Wine.
(4.5litre cooker) Fry 2 large chopped onions till soft in tbspn oil, add 1.5kg cubed stewing beef or steak, and brown .add 2 crushed garlic cloves(not essential if you don’t like garlic)10 chopped tomatoes(I always use a couple of large cans)800g mushrooms(nice to use whole small ones)1 litre red wine, salt and pepper, bay leaf if you have one and bring to a simmer ,transfer to slow cooker pot and cook 4-8 hours on medium. Remove bay leaf and add some chopped parsley to serve-lovely with mashed potatoes. if you don’t want to use all that wine just substitute half with beef stock

Fry 2 medium, sliced apples with 2 large chopped onions in a pan until soft. Coat 700g beef in 3 tblsp. flour and fry until lightly browned. Stir in 400ml of stock and bring to a simmer. I brown the mince before hand. I start with mince and crumble the two beef oxo cubes over the mince, stir then add the dollop of garlic, dollop of Worchester sauce, herbs de province and Tabasco. cook until mince is all browned.

Ingredients:
4 skinless, boneless chicken breast halves - cubed
1/8 cup margarine
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (8 ounce) package cream cheese
1 (10.75 ounce) can condensed cream of chicken soup
A splash of milk
Directions:
Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours.
Add cream cheese, a splash of milk and soup, mix together and cook on high for another 1/2 hour or until heated through and warm.

I also made this, but I didn't have a recipe. I put a 4 pound pork roast in the slow cooker. I put apple juice, brown sugar, worchester sauce, salt, pepper, garlic powder and onion powder in with it. Then I put it on low for about 7 hours. It was delicious! It was so tender, it couldn't even be cut-- it just fell apart. Yum!

I added too much yellow curry powder to my soup, cooking with a crock pot...what to do??
I added 3 tsp of curry powder, but should have been only 1 tsp. How can I correct the soup? Adding more water, or pour some water out, then add fresh water??
Answer: Add 1/2 can of coconut milk or a few tablespoons of yogurt, it will balance out the excess spices. You can also add a chopped tomato or a little tomato paste too. This should do the trick. Curry powder is 50% turmeric, which just adds more yellow color than flavor. The above tricks should work, dont worry your curry is salvageable and will be delicious!

How do I cook meat in the crock pot? ?
Everytime I put something in the crock, it comes out tough! Im not overcooking, I keep in on low for 4-6 hours and its still not right. Ive tried all cuts of beef, and now I bought a pork butt to try. I want it to break apart with a fork and melt in my mouth. Also, any coconut/curry ideas for the crock will be greatly appreciated! Thank you!

Answer: Pick a cooking liquid you like (red wine for beef, for example). Take the meat and sear it in a nonreactive pan (stainless steel or anodized aluminum, if you're not sure), then transfer it to the crockpot and splash the cooking liquid into the pan, scraping up the browned bits on the bottom (that's called deglazing). That's the beginnings of a braise; you will probably want to add some vegetables as well, maybe some chopped and browned bacon.
The general principle is the same no matter what you're using. Just remember that you can't really roast in a crockpot, and pretty much anything good that comes out of it is going to be some variant on a braise or a stew. (Or, perhaps, a fondue or soup. And I like it for Irish oatmeal as well.)

whats another base for one-pot cooking?
I love to cook but i tend to only make variations on three basic themes. Stew/soup with a vegatable stock base, spaghetti sauce come vege stew with a tomato base, and thai curry with a coconut milk base. I like one-pot cooking cos it is low mess, low fuss and easy to chuck in the fridge and freeze. I cook a lot of different things but just the three basic themes of coconut milk, tomato, and vegatable stock. I sometimes make a gravy-based stew, but i dont like meat very much. Are there any other bases i can use for one pot (plus rice or pasta) vegetable cooking?

With the lack of meat I would suggest working in some beans for protein.
A pot of beans and cornbread are a simple yet great meal, after that meal save the leftovers to use in a soup.
Make a simple soup by sauteing onions, carrots, celery and garlic whatever etc etc
( I like to do this to empty the fridge of vegetables that are old )
then add chicken stock and the left over beans
I like to add some fresh greens for color ie parsley or kale but you can add fresh cabbage also

Buying a crock pot/slow cooker for the first time, looking for tips/features that I should look for? Recipes?
OK, so Im buying a crock pot for the first time and Im wondering what features/brands etc. I should look for. Do I need a timer etc.? Should I get one that will automatically keep something warm when its finished cooking?
I just got a new job and Ill be out all day so Id like to have dinner ready sometimes for when I get home. Im single and live alone, so I probably dont need a really big one, although I would like to be able to fit a whole chicken in it. I enjoy spicy foods like curries, asian style foods, and foods with lots of flavour, so if anyone has any great, easy recipes Id love to hear them. I dont want anything where I have to pre-cook something, then put it in the crock pot to cook more.

Answer: Since you'll be leaving the slow cooker all day, it would be best to get one with a Keep Warm setting. Most already have removable crocks these days, which is essential.
Re size, most 6 qts will cook a whole chicken, but it's also possible to cut a chicken in half with kitchen scissors before cooking.
However, keep this in mind. The slow cookers/crockpots sold nowadays all cook hotter than the older ones, and that's Not Good.
It means that more delicate proteins like chicken (especially white meat) will definitely get overcooked and on the dry side after only about 4 hours (on Low), and everything will just cook hotter than optimal. (The reason they're made hotter now is because so many people were tossing frozen meat into the cookers, which is a safety concern... so to avoid being sued by anyone who got sick, they just upped all the temps of all the units.) Also, any slow cooker you use should be at least 1/2 -2/3 full of *something* to keep from it from cooking even hotter than it normally would, so you'd want to think twice about getting a larger one unless you like to cook big batches then freeze, etc. (which can be great when cooking for one though).
Various brands and models of slow cookers cook at slightly different temps to for their particular Low or High and it can be hard to find out just what those temps are. I'd do some reading at amazon.com, etc., where there are reviews of various slow cookers to see what kinds of things are good and bad about some units you're thinking of... that will give also you some good basic ideas about what the posisibilities and considerations are.
One other option to consider would be buying a freestanding "oven roaster" instead of a unit sold specifically "as a slowcooker." Those have an actual temperature dial on the front so you can select any temp you want (though don't know how many also have timers), and they'll also do all kinds of other things as well like baking, poaching, etc., without using as much energy as a regular oven but still sit on the countertop.
Here's are some of that type at the Nesco site... I just ordered one that's a 6 qt, with a porcelain crock "cookwell," that I'm very much looking forward to, but they also have non-stick cookwells, and different sizes:

I probably won't need a Keep Warm setting since I can just set a fairly low temp to begin with, but if you're gone for more than 10 hrs on a regular basis, you might want that.

how can I achieve the most succulent and tender chicken in my curry? Must I always use yogurt?
Are there any preparation for the chicken that I should do before I cook it? Is there a certain way to cook it like in a pressure cooker or crock pot, instead of just a normal skillet?
Answer: I have tried many different things, but in the end, it all comes down to using leftover roast chicken from the day before - it's always so tender because it has been slow-cooked.
So I'd recommend planning to make it on a monday, the day after a sunday roast...I'm not sure where in the world you are, but that's the tradition here in the UK!

How to remove stain from a pan?
Hi, I just purchases a Calphalon Hard Anodize 12 inch pan and was cooking curry pork chops with it. I am having a problem with curry stain on the pan now. I follow the manufactures instruction on cleaning it (Comet and Scotch pad) and still no luck. I know they are good pans but now I am a little skeptical of their quality. I never had that problems with my other stainless steel pots. Any suggestions would help.
Answer: I use denture cleaner (the effervescent kind) to clean stains out of pans. Put a few in with just enough water to cover all stains, then let soak.

4-day old curry cover in white substance, should i eat it?
I cooked a pot of beef curry on Wednesday, and because its a really big pot so i just cover it and leave it on the stove (room temperature is around 60F i think). For the past few day i heat the whole pot every time i want to eat it, so the curry never got the chance to solidify. But i didnt eat it yesterday and when i checked today, the pot of curry is cover in a white, spiderweb-like substance, and the currys texture have become like caramel. So now i am afraid to eat it, because i am not sure if it have gone bad or the white stuff is just the fat from the beef, but i am not sure because white part was silky and the curry was all goo.
P.S. my pot lid does not completely seal, there is a small crack between the pot and the lid because the original lid was missing.
whew,i must have a strong stomach then. Good thing i stored most of the curry in plastic box and freeze it beforehand, had to leave some in the pot because the fridge is really full. I actually did the same thing last time, but it was chicken curry, and i was fine for some reason. anyway, really appreciate the comments, you guys saved me from a trip to the hospital :P
Answer: well, I'm surprised you've been ok so far. Even curry should go in the fridge, and even then it's only good for a day or two. You need to chuck it, and make another. I would also suggest you do some research on food safety, as botulism is a serious illness, and can kill you. It is not detectable by sight or taste. Follow the rules and you'll be safe. Cooked items are good for 2 hours at room temp, but after that they aren't good any more. If you're making large batches of food, invest in some ziploc freezer bags, and divide your food into portion sizes in them and put in your freezer, if you're going to be eating it all within 2 days you can store it in your fridge. DO NOT EAT THE CURRY!!!!!!!

My cooking story LOL comments?
As the cooking pot dragon started to spew hot oil on me as it ate the onions, i stood there bravely armored with a chopping board and a ladle. I did not know what to do next. I threw the tomatoes at it with some sauce, salt and pepper. Imagine my surprise when none of it seem to slay the dragon. i knew i had to do something but what?? i am not an experienced dragon slayer but i did slay the first dragon with green veg and mushroom. but this one is different. stronger. with extra curry. I was going out of options. The dragon is furious. what should I do??? Oh God show mercy. Help me. As I was giving up, that is when the legendary knight of food commenting, Sir Aru Dad of Thibahtarusini came to my rescue. I listened impatiently as he said the key to a successful dragon slaying is more sauce more curry and more water. Finally, we managed to slay the evil dragon. But i am too tired to have lunch. next time perhaps.
